HOW EXACTLY, you do that on windows I can't tell you because even though I use windows as my Day-to-day computer I don't use it as a server for plex anymore.
The other option would be, if you still want to let your PC go to sleep but just not when something is streaming, is to prevent the sleep when a stream is running. As described here or the other, many, sites on the web when you just search for it. If you don't want to let your PC go to sleep at all then you can disable that behaviour in your power management settings of your OS.
You have two options here depending on what you want.
